<span style="font-family: Courier New, Courier, monospace;">On Sunday 25th June, the street that runs through our neighbourhood of Stoneybatter will be closed to traffic between 12-6pm for the Stoneybatter festival family fun day. We are hosting a long table Sunday roast running up Manor Street. There are seats for about 40 and booking is essential via<a href="http://www.lmulliganwhiskeyshop.com/product-p/ltsr.htm" target="_blank"> this link.</a> We will start with some tasty sharing platters & punch, before moving on to the main course. While Stoneybatter is frequently referred to as Cowtown, for us a Sunday Roast is all about pork. The roast will be rare-breed pork belly with crispy cracking, served with shared platters of Irish baby carrots roasted in local honey, mash made with the last of our Phoenix Park foraged wild garlic and beetroot from our allotment as well as lashings of lovely gravy. Our pals at Slice have come up with a brilliant dessert option to finish off the meal and sustain you through the rest of the festival. </span></div>

In the late years of the last decade (circa 2007 onward, though as my memory is a little hazy I am sure I will be corrected by nuts wiser than mine about the specifics) we would meet monthly in the darkened upstairs hall of the Bull and Castle. We were there to share not only genius works of home brewing skill but opinions, beers, stories, plans and most importantly our passion for great beer. This is where I first met Grainne and Tim and where I first talked to them about the brewery that had no name at the time, and would eventually become Metalman. There was no talk of a dog then. </span></span></div>

In 2011 they took the plunge, with head brewer Grainne leaving her I.T. job to embark upon her great brewing journey, while Tim held down his day job for a couple more years, before joining the brewery full-time. They stand as proudly for quality and ingenuity now as they did the day the first barrel was cracked in L Mulligan Grocer all those years ago, surrounded by former Amazon colleagues and future devotees. We are proud to have them come back to us this Sunday, bringing with them their good friends from Left Hand Brewery, Colorado.</span></span></div>

The phenols of peat are working their way into our perked nostrils. All the flavours of the distillate present in the base come to life in this one. The addition of the 10% strongly-peated whisky brings sweet iodine to the nose. The palate gives you a beautiful grain-versus-peat battle that settles together and brings a new medicinal profile to the whisky. Light salt air brings you from the palate to the finish, leaving the peat to hang around. This works extremely well. Having the original reference whisky to compare to perfectly demonstrates that peat does much more for a whisky than just adding ‘smokiness’. </span></div>

The way the peat allows the base to stay very present in this ‘new’ whisky is its greatest trick. The peat holds strong in the push for flavour representation but doesn’t hurt the base in the way the sherry did. Initially I was going to order the the 30ml samples from Master of Malt. Having tasting the fantastic whisky I am delighted we went for the 500ml bottle. ‘Yes another whisky tasting is needed with the staff’. </span></div>

The addition of sherry blends with the base to mask the strong grain nature of the whisky. The sherry combines with the apple sweetness of the base and gives an oily, boiled-sweet nose. The palate is more rounded with nuts and cake present; it really gives a lot to the whisky. The finish is where I notice the difference side by side with the original reference whisky! It lingers longer, with the cake turning fruity. </span></span></div>

It introduces additional spice and fruit cake flavours. This isn’t exactly what you would expect one month in a sherry butt to do to a whisky. While we are still going to dress up on the 31</span><span class="s2"><sup>st</sup></span><span class="s1">, pumpkin-bomb the pub, the usual malarkey, we decided to go a little further to pay homage to the what I consider the greatest TV show of all time. </span></span></div>

A recurring theme of food and drink culture consistently arose, each time a wedding, birthday or the visit of great house was mentioned great lengths went into the description of the settings and what was on offer. This intrigued me, so being the nerd I am and knowing the kind of following the series has, suddenly I was organising a medieval banquet!</span></span></div>

A room decorated in candles, house banners, antlers and furs will provide the backdrop for our Westerosi Halloween dinner. </span></div>

The weekend of October 9-11th sees the first Stoneybatter and Smithfield Food Festival come to the Shire, with a calendar of events happening throughout the neighbourhood. We are particularly excited about Lilliput Store's Viking Tapas and DesIreland's screening of Symphony of the Soil at the Lighthouse.<br />

L. Mulligan. Grocer will be hosting a long table brunch, celebrating the best of the season, with a Dublin 7 twist. The three course feast will include soft boiled bacon scotch eggs, Black Coffee IPA made by Brown Paper Bag Project in conjunction with 3FE, a stonking take on the Full Irish breakfast and stone fruits from our allotment griddled into rib-sticking perfection atop smoked dark chocolate brioche.<br />

Some time ago, we had a perky barman from Atlanta called Brian. While pulling pints and changing kegs, he dreamed of fermentation times, malt varieties and the intricacies of hop flavour profiles. Brian is now the full time brewer at the Brown Paper Bag Project, a locationless brewery that travels the globe making tasty beer influenced by local styles and the people they meet. As an ex-chef he is also keen to explore food and beer pairing in a way that not only complements the beer but allows us to traverse the flavour profile.</div>

We are delighted to be hosting a beer pairing dinner in conjunction with the Brown Paper Bag Project. We are building the menu around five Brown Paper Bag Project creations (including one brand new beer!). We are using a beer as the starting point to create each of the five courses. The brewers and chefs are working closely together to explore the nuances of the beers through the produce they are paired with. Irish game, cheese fondue, smoked root vegetables and bitter dark chocolate all have their dance card marked for this St Patrick’s Day eve celebration. </div>

We have spent the past weekend pairing whiskey with food at <a href="http://www.whiskylive.com/ireland/114/dublin-2014">Whiskey Live Dublin</a>, a brilliant event organised by our friend Ally Alpine of the <a href="http://www.celticwhiskeyshop.com/">Celtic Whiskey Shop</a>. We were alongside Irish Distillers, matching their Jameson Black Barrel and Redbreast 15 with some lovely canapés. It was a great opportunity to showcase how whiskey and food can cosy up to each other and create a balance of flavours. The partnership was such a success that we have decided to team up to host a Single Pot Still Dinner. We will be joined by Ger Buckley, the master cooper from Midleton, who will raise and char a barrel in our beer garden and Liam Donnegan who will lead a tasting of some of the Single Pot Still range. Pot still is a style of whiskey unique to Ireland and we are very proud to be pairing it with the best Irish produce of the season. </div>

The first day of July will mark <strong>four years</strong> since we were lucky enough to take over L. Mulligan. Grocer. Our goal was to create a pub at the heart of the community that cared deeply about the products and people it serves. We believe Irish produce is special and worth celebrating and we hope we have done that justice since we opened.<br />

We have been honoured over the last four years to have featured in so many celebrations and lovely times. It has been a Scotch-egg, craft beer fuelled joy and we look forward to the next four! Thank you for your patience, your enthusiasm and for inviting us to be part of your stories. Without you all, Mulligans would not be the pub it is.<br />

As you know, we have a little bit of a crush on our suppliers and many of them are joining our celebrations. We would love if you would join us.<br />

<strong>Quiz Night. </strong>On Sunday 29th June 8.30PM we will be kicking off the celebrations early with our monthly quiz. We will be borrowing our 4-year old nephew's reading materials for question inspiration, so brush up on your Peter Rabbit and Lego trivia. There will be cake. </td></tr>

When they were recently joined by new brewer Mark, we could not have been more pleased. The result is some delicious new beers from the lads. We are showcasing their new limited edition beers matched with a four course tasting menu on Thursday 3rd July. <strong>Brown Paper Bag Project Launch:</strong>Colin and Brian both once worked behind the bar in Mulligans while dreaming of brewing nutty brown ales and hopping Belgian blondes. They are now part of the Brown Paper Bag Project, a location-less brewery that travels the word brewing beer influenced by the brewing styles of the region and the people they meet. They will be launching their newest beers on the afternoon of Saturday 5th July with a BBQ in our beer garden using produce from local suppliers. <strong>Jaunty Hats, Rice Crispy Buns and General High-Jinks</strong>: Saturday 5th July from 6.30pm onward, we will be styling our moustaches, donning our jaunty hats, and generally getting dolled up to celebrate as all four year olds should: with rice crispy squares, fizzy drinks (ours will be craft beer) and bunting. There will be 'Sir' Jack's Black Pudding wontons, treats from Arun Bakery and staff selected beer & whiskey specials. If you plan to join us for the evening, we implore you to wear your finest headwear as there will be lovely craft beer giveaways for the finest clad heads.<br />

<span style="letter-spacing: 0px;">We met the chaps from Coisbo at the Alltech Brews and Food conference, and were so impressed with their beers that on the first night we offered to buy from them anything left over at the end of the festival. As luck would have it all of their beers won medals in the Dublin Beer Cup, and one of their beers, the Russian Imperial Stout was crowned the overall champion. The thirsty masses descended and there was not a lot left for us to bring back to Stoneybatter.
